Beloved heap of oozing awesomeness

by Zack Wenthe

The ritual of a good glass of wine, the appeal of a perfect old fashioned. It makes you feel like something special was crafted just for you.

People enjoy the craft. They enjoy the effort. They enjoy the mystery of Ernest Hemingway drinking a whiskey neat in front of a typewriter.

Anthony Bourdain knew this about food.

On paper his favorite sandwich is nothing. Fried mortadella, melted provolone, mayo, and mustard on a toasted Kaiser roll.

It's a boring sandwich until you hear him describe it.

"It’s kind of a giant baloney studded with chunks of fat. This is one of those foods I just want to take a picture and keep it in my wallet. It is, I gather, a rite of passage for visitors to the city — a beloved heap of oozing awesomeness, a reflection (or mutation) of Brazil’s proud and powerful Italian dimension. They sure as hell don’t have this in Italy."

- Anthony Bourdain, Appetites (2016)

Same sandwich.

Boring is a choice. Craft is the other one
